TWO DOCTORS WALKED INTO A BAR...

In 2012 two doctors, one trained in travel medicine, cosmetic and laser surgery (Jerry) and the other a clinical haematologist/scientist (John) joined forces to transform, almost by alchemy, the sun’s energy captured in single malted barley into liquid gold. By distilling the best possible ingredients with painstaking attention to every step of the process, a handcrafted whiskey of refined eccentricity was born.

The duo has been single minded from the start of their whiskey journey. It really did begin over a drink – albeit Jerry was carefully ambushed by his longstanding friend John. Frustrated by the seasonal constraints of wine making, John realised he could leverage Jerry’s years of brewing infrastructure in the Hunter Valley to collaborate throughout the year - independent of harvest season. So, the conversation went something like this: “Jerry, do you know what whiskey is?”, to which Jerry transparently replied “No, come to think of it, I don’t know”. John pulled the trigger: “Jerry, whiskey is distilled beer” to which the thrilling reply came without hesitation “We gotta do it mate!”. Two Doctors Whiskey was born in the cradle of the Spirit of Sydney Distillery they built together.

How many craft distillers will resolutely wait for six years before releasing any product? No gins, no vodka, no moonshine! Just what the two doctors ordered. Releasing the first of their single cask single malt core range ten years after conception, they have leveraged their respective strengths – with Jerry on the business and infrastructure side and John on the distilling and brand development.

CRAFTING WORLD CLASS WHISKEY
WITH SUSTAINABILITY IN MIND

We are mindful of our responsibility to sustainability and the environment. Our stills were designed by us in 2012 to be powered by electricity, rather than the traditional steam or fire. Our 100kW rooftop solar panels distribute electricity to our brewery and distillery. We produce Two Doctors Whiskey using 100 % renewable energy.

On property adjacent to Crowne Plaza Hunter Valley in Lovedale, Dr Jerry Schwartz has installed a 5,000 mW capacity solar farm comprising 13,350 panels at a cost of AUD 8.5 million. The solar farm became operational at the end of 2019, delivering a renewable energy source and a C02 reduction of approximately 7,811,000 kg per annum – equivalent to removing over 4300 vehicles annually from the road. We commit to regularly upgrading our systems to become more efficient. All new developments incorporate the very best in minimising waste, recycling water and renewable energy.
